Pack-a-Punch: Spicy Egg Mayo Salad 🍳🌶️

No worries, here's a quick easy simple lunch that 'pack-a-punch'. 🍳🌶️
Cooking Time: 10 minutes
Serves: 1-2 portions
Ingredients:
- 2-3 eggs
- Mayonnaise of your choice
- Salt
- Pepper
- Sugar

Chilli Chan’s Crispy Chilli Oil
Instructions:
- Boil the eggs for 6 to 8 minutes, depending on the size of the eggs. The larger the egg, the longer the cooking time.
- Peel the eggs and cut them to halves to make it easier to smash later on.
- Add in Chilli Chan's Crispy Chilli Oil as much as you want or as spicy you want the dish to be.
- Add in the mayonnaise of your choice. 2-3 tablespoons is enough. If you wanted creamier you can add more. (More tips down below!)
- Season with a pinch each of salt, pepper, and sugar.
- Grab a fork and use it to SMASH the eggs with the other ingredients. Thoroughly mixing the ingredients in the process.
- Serve as a dip with your favourite crackers or chips, even as a sandwich filling!
Tip‼️
If you want to make this lower in fat, you can add less mayonnaise and sub in with greek yoghurt.
If you want to make this dish more filling, add in more protein like tuna and chopped shrimped. You can also add in chopped spring onions or scallions or celery, to add more freshness and fiber.
