Chilli Oil Focaccia 🥖

This delicious Chili Oil Focaccia is the result of blending a classic Italian bread with the bold, umami-rich flavors of Taiwanese crispy chili oil. It’s soft and airy on the inside, golden and crisp on the outside, with little pockets that soak up all that spicy goodness. It all sounds fancy, but it’s surprisingly easy to make, you just need patience!

Cooking Time: +3 hours

Serves: 1-3 person

Ingredients

  • 500 g pizza flour (±12% protein)
  • 7 g yeast (or ±1 tbsp)
  • 2 tbsp (sea) salt
  • Olive oil
  • 400 ml lukewarm water
  • 1 tbsp honey
  • Crispy chili oil
  • Sesame seeds (optional)
  • Rosemary (optional)

 

Instructions

  1. In a large bowl, mix the 400 ml lukewarm water with 1 tbsp honey, the yeast, and 1 tbsp olive oil.
  2. Add this mixture to the 500 g pizza flour (we use this flour because it gives a better texture), then add the 2 tbsp salt.
  3. Mix everything together using a silicone spatula until combined. The dough should be sticky and quite liquid, this is exactly what you want.
  4. Cover the bowl with foil and let the dough rest for 20 minutes.
  5. After 20 minutes, wet your hands or lightly oil them to prevent sticking. Do a stretch-and-fold all around the bowl. Cover again and let rest for another 20 minutes. Repeat this stretch-and-fold process one more time (3 times total, with 20 minutes rest in between).
  6. After the last stretch and fold, cover the dough and let it rest for 1 hour.
  7. Transfer the dough to a well-oiled oven dish (you can place baking paper inside, but make sure it’s generously coated with oil).
  8. Gently lift the dough and let it fold in on itself naturally. If you want a stronger chili oil flavor throughout, add the crispy chili oil now and gently fold it into the dough. If you prefer the heat mainly on top, skip this step and continue below.
  9. Cover again and let the dough rest for another hour, until bubbly and airy.
  10. Preheat the oven to 220°C.
  11. Drizzle crispy chili oil over the top and gently dimple the dough with wet fingers, being careful not to pop the bubbles.
  12. Sprinkle with sesame seeds (and rosemary if you like). Bake for 20–25 minutes until golden and crispy on top, checking occasionally.
