XO Bok Choy 🥬

Ingredients:

  • 400g bok choy, halved lengthwise
  • 2 garlic cloves, minced
  • 5g fresh ginger, minced
  • 15ml soy sauce
  • 1tbsp XO sauce
  • 1 tsp cornstarch mixed with 2 tbsp water (cornstarch slurry)
  • 1 tbsp oil (for cooking)
  • 30ml water 

Instructions:

  1. Wash the bok choy thoroughly and slice in half lengthwise.
  2. Heat oil in a pan over medium heat. Add garlic and ginger, stirring until fragrant, about 30 seconds.
  3. Add the bok choy to the pan, cut side down. Pour in the water, cover with a lid, and let steam for 2-3 minutes until slightly tender.
  4. Remove the lid and add soy sauce and XO sauce. Toss to coat evenly, then stir in the cornstarch slurry to thicken the sauce. Cook for another 1-2 minutes until the bok choy is tender but still crisp.
  5. Plate immediately, making sure to drizzle all the delicious sauce over the bok choy. Garnish with Chilli Chan’s Crispy Chili Oil and sesame seeds. Serve hot as a side dish to rice, noodles, or your favorite main meal.Â
