Defrost Dumpling Wraps: Remove the dumpling wraps from the freezer and let them thaw completely.
Prepare Vegetables: Dice mushrooms and cabbage finely. Grate the carrot. Separate the white and green parts of the green onion; dice the whites and slice the greens for garnish. Crumble the tofu into small pieces.
Mix Ingredients: In a large bowl, combine the diced mushrooms, cabbage, grated carrot, diced green onion whites, and crumbled tofu. Add the garlic, ginger, white pepper, soy sauce, MSG (if using), and mushroom powder. Mix thoroughly.
Cook the Filling: Heat a pan over medium heat and cook the filling mixture until the moisture from the vegetables and tofu has evaporated. Transfer the cooked filling to a bowl and let it cool completely.
Wrap Dumplings: Place a small spoonful of filling in the centre of each dumpling wrap. Seal the edges tightly, removing any air bubbles to prevent bursting during cooking. Ensure an airtight seal.
Cooking the Dumplings: Bring a pot of water to a boil. Add the dumplings, noting that they will lower the water’s temperature. Wait for the water to return to a boil, then add a small splash of cold water to stop boiling temporarily. Repeat this process 2–3 times until the dumplings are fully cooked and floating. Carefully remove the dumplings from the water using a slotted spoon.
Make the Sauce: In a small bowl, mix light soy sauce, black vinegar, sugar, sesame oil, chilli oil, sesame seeds, and sliced green onion greens. Or just use the Chilli Vinegar Dressing for an instant flavor bomb.
Serve: Toss the cooked dumplings in the dipping sauce to coat them evenly.
