Spicy Tofu Dumplings 🥟

Ingredients:

  • Dumpling wraps (frozen, then defrosted)
  • 150g mushrooms, diced finely 
  • 200g cabbage, diced finely 
  • 1 green onion, separated 
  • 200g firm tofu, crumbled
  • 2 garlic cloves, minced 
  • 1 tsp fresh ginger, grated 
  • Half tsp white pepper
  • Half tsp MSG (optional)
  • 1 tbsp soy sauce 
  • 1 tsp mushroom powder (optional) 

Dipping sauce: 

  • 2 tbsp light soy sauce 
  • 1 tbsp black vinegar 
  • 1 tsp sugar
  • 1 tsp sesame oil 
  • 1 tbsp Chilli Chan's crispy chilli oil 
  • 1 tsp sesame seeds 
  • Sliced greens of the green onion

Instructions:

  1. Remove the dumpling wraps from the freezer and let them thaw completely.
  2. Dice mushrooms and cabbage finely. Grate the carrot. Separate the white and green parts of the green onion; dice the whites and slice the greens for garnish. Crumble the tofu into small pieces.
  3. In a large bowl, combine the diced mushrooms, cabbage, grated carrot, diced green onion whites, and crumbled tofu.
  4. Add in the same bowl the garlic, ginger, white pepper, soy sauce, MSG (if using), and mushroom powder. Mix thoroughly
  5. Heat a pan over medium heat and cook the filling mixture until the moisture from the vegetables and tofu has evaporated. Transfer the cooked filling to a bowl and let it cool completely.
  6. Place a small spoonful of filling in the centre of each dumpling wrap. Seal the edges tightly, removing any air bubbles to prevent bursting during cooking. Ensure an airtight seal.
  7. Bring a pot of water to a boil. Add the dumplings, noting that they will lower the water’s temperature. Wait for the water to return to a boil, then add a small splash of cold water to stop boiling temporarily.
  8. Repeat this process 2–3 times until the dumplings are fully cooked and floating. Carefully remove the dumplings from the water using a slotted spoon.
  9. Toss the cooked dumplings in the dipping sauce to coat them evenly.
