Chinese Steamed Eggs with Crispy Chilli Oil š³

It is the perfect quick and healthy meal, whether you are enjoying it on its own or pairing it with rice and veggies. Ingredients:
- 4 eggsĀ
- 120ml waterĀ
- 60ml milk (any milk is suitable)Ā
- 1 tsp of fish sauceĀ
- 1 tsp of soy sauceĀ
Toppings:Ā
- 1 tsp soy sauceĀ
- A drizzle of sesame oilĀ
- 1 tsp of Chilli Chan's crispy chilli oilĀ
- Green onions, choppedĀ
- Sesame seeds
Instructions:
- Crack the eggs into a mixing bowl and gently whisk until smooth. Make sure the eggs are well combined.
- Add the water, milk, fish sauce, and soy sauce. Whisk until fully combined.
- Pour the mixture through a fine mesh strainer into a heatproof bowl or shallow dish. This removes air bubbles and ensures a smooth custard. If any air bubbles remain on the surface, use a small strainer to carefully skim them off.
- Place the bowl in a steamer over medium heat covered with a lid or plastic wrap. Steam forĀ 10 to 12 minutes, or until the eggs are just set with a slight jiggle in the center.
- Remove from the steamer and let it rest for a minute. Drizzle withĀ Chilli Chanās Crispy Chilli Oil and other toppings.
- Toppings are suggested but top with whatever you like (cilantro and peanuts would be delicious too)! Serve hot on its own or with rice.
