Prepare the egg mixture: Crack the eggs into a mixing bowl and gently whisk until smooth. Make sure the eggs are well combined.
Add the liquids: Add the water, milk, fish sauce, and soy sauce. Whisk until fully combined.
Strain for a silky texture: Pour the mixture through a fine mesh strainer into a heatproof bowl or shallow dish. This removes air bubbles and ensures a smooth custard. If any air bubbles remain on the surface, use a small strainer to carefully skim them off.
Steam the eggs: Place the bowl in a steamer over medium heat covered with a lid or plastic wrap. Steam for 10 to 12 minutes, or until the eggs are just set with a slight jiggle in the center.
Garnish and serve: Remove from the steamer and let it rest for a minute. Drizzle with Chilli Chan’s Crispy Chilli Oil and other toppings. Toppings are suggested but top with whatever you like (cilantro and peanuts would be delicious too)! Serve hot on its own or with rice.
