
Taiwanese Eggroll: Dan Bing š„
If you're after a breakfast thatās quick, satisfying, and full of flavour, this Dan Bing recipe is a must-try. A beloved Taiwanese street food, Dan Bing is a savoury egg pancake with a chewy base, crisp edges, and endless filling possibilities ā from cheese and ham to pork floss.

Ingredients:
- Half cup all purpose flourĀ
- 3 tsp tapioca flour/starchĀ
- Green onions, choppedĀ
- 3/4 cup of waterĀ
- SaltĀ
- 1 egg per pancakeĀ
- Filling of your choice
Sauce:Ā
- 1 tbsp hoisin sauceĀ
- 2 tsp soy sauceĀ
- 1 tsp Chilli Chan's crispy chilli oilĀ
Instructions:Ā
- In a mixing bowl, whisk together the all-purpose flour, tapioca flour, salt, and water until smooth. Once smooth, mix in the green onions. Batter should be runny, not thick.Ā
- Heat a non-stick pan over medium heat with a little oil. Pour in a thin layer of batter, swirl to coat the pan evenly, and cook until the pancake is set and golden brown on both sides.
- Repeat with the remaining batter and set the finished pancakes aside.
- Crack 1 egg into the pan and quickly whisk it in the pan using chopsticks or a spatula to create a thin, even egg layer. Before it sets, immediately place a cooked pancake directly on top of the egg, pressing gently so the egg sticks. Let it cook for another 30 seconds until the egg is fully set and attached to the pancake. Repeat with the remaining pancakes and eggs.
- Flip the pancake egg-side up, sprinkle over your desired toppings (cheese, ham, pork floss, etc.), then fold or roll it up in the pan.
- Make the sauce: In a small bowl, mix hoisin sauce, soy sauce, and Chilli Chanās Crispy Chilli Oil.
- Slice each rolled Dan Bing into bite-sized pieces and serve with the sauce on the side ā or drizzle it right on top.
