Spicy Onigiri with Aluminium Foil Hack 🍙

This week’s recipe is one of Japan's famous convenience stores purchases — Onigiri 🍙.
If you’re always on the move but still crave something homemade, this aluminium foil hack is for you! It’s quick to make, easy to pack, and perfect for when you want that fresh, handheld snack on the go — just like the ones from Japanese convenience stores. Our version has a spicy and tangy kick to it!

Cooking Time: 20–30 minutes
Serves: 2–3 people

Ingredients:

  • Sushi rice (or regular white rice)
  • A drizzle of sesame oil or rice vinegar (optional, for flavor)
  • 1 can of tuna
  • 1–2 tbsp mayo (adjust to creaminess)
  • 1–2 tsp crispy chili oil  (use the chili bits!)
  • 1 tbsp kimchi (chopped)
  • Nori seaweed sheets
  • Aluminum foil
  • Washi tape or scotch tape
  • Optional: black pepper, furikake, or any extra seasoning you like

  1. Cook the rice and make sure it’s slightly sticky for the best texture. Add a drizzle of sesame oil or rice vinegar for extra flavor.
  2. Drain the canned tuna and mix it with mayo, chili oil bits, and chopped kimchi. Add seasoning like black pepper or furikake if you’d like.
  3. Form the rice into triangle shapes (you can use an onigiri mold from the Asian supermarket, or shape it by hand using plastic wrap).
  4. *Cut the seaweed in half. Lay a piece of aluminum foil that’s more than twice the width of your seaweed. Place the seaweed in the middle and fold both sides toward the center of the seaweed, then flip it over.
  5. Stick a piece of tape vertically in the middle of the foil. The bottom piece should sit at the edge, and the top can have a little extra tape left over. Flip it again, open the foil, and use the leftover tape to stick the inside edges — creating a small loop.
  6. Close the foil again and lightly oil the foil to prevent the rice from sticking.
  7. Place the onigiri on top of the foil and fold it over, sealing the sides.

And that’s it! A quick, portable onigiri hack that’s perfect for lunch, road trips, or your next picnic. You can switch up the filling too — try salmon, avocado, or even spam for your own version!
