Fan Tuan (Taiwanese Rice Roll) 🌯

Fan Tuan (Taiwanese Rice Roll) is one of Taiwan’s most comforting breakfast staples, the kind of street food that’s simple, hearty, and packed with flavor. Originating from Northern Taiwan, this handheld meal is like the Taiwanese version of a breakfast burrito, filled with savory ingredients all wrapped in sticky rice. Traditionally sold in early morning markets, it’s the perfect grab-and-go bite to start your day. It's warm and chewy with a little crunchy from the fried dough stick.

Cooking Time: 20 minutes (rice will take longer) 
Serves: 1–2 people

Ingredients:

  • 1 cup sticky rice (glutinous rice)
  • 1 cup pickled mustard greens
  • 1 tbsp minced garlic
  • Pork floss
  • 1 Chinese fried dough stick (youtiao)
  • 1 egg (cooked your way)
  • 2 tsp crispy chilli oil (add more if you like it spicy)
  • 2 sprinkles of sugar
  • Plastic foil (for wrapping)

All ingredients can be found at your local Asian supermarket.


Instructions:

  1. Rinse 1 cup of sticky rice thoroughly until the water runs clear. Cook according to package instructions and let it cool slightly.
  2. Heat a bit of oil in a pan, add 1 tbsp minced garlic, and fry until fragrant.
  3. Add the pickled mustard greens, 2 tsp of crispy chilli oil, and a couple of sprinkles of sugar. Stir-fry for a few minutes, then set aside.
  4. In the same pan, fry your egg the way you like it: sunny side up, scrambled, or omelette-style all work great!
  5. Lay a piece of plastic foil flat on your work surface. Spread the cooked sticky rice evenly on top (don’t skimp! a generous layer helps with rolling and makes it extra filling).
  6. Add a layer of the pickled mustard greens, pork floss, fried dough stick, and your egg.
  7. (Tip: use a sushi mat for support.) Roll everything tightly together and seal the sides.
  8. Let it rest for a few minutes to hold its shape, or enjoy it hot right away.
  9. Cut the roll in half to make it easier to eat!Â
