Crispy Enoki Mushroom with Hot Honey 🍄

Their light, chewy texture soaks up flavors like a sponge, making them the perfect base for bold ingredients like hot honey chili oil. Cooking Time: 30 minutes 
Serves: 1–2 people

Ingredients

  • Rice paper sheets 
  • Seaweed sheets 
  • Enoki mushrooms 
  • Hot honey chilli oil 
  • Soy sauce 
  • Salt and pepper 
  • Corn starch 
  • Oil 

Instructions 

  1. Cut off the stems of the enoki mushrooms, slice them in half horizontally, and rinse them gently under cold water or dip them in a tall glass. Pat them dry with a paper towel afterwards. 
  2. Wet a rice paper sheet lightly and place it on a flat surface (make sure it's large enough to fit your seaweed sheets). 
  3. Lay your seaweed sheet on top of the rice paper. Place one enoki mushroom on top of the seaweed. 
  4. Roll up the rice paper and seaweed around the mushrooms, like a burrito. Slice it into pieces (Tip: Keep them thick to prevent the mushrooms from falling out too easily!)
  5. In a small bowl, heat up some of the hot honey chili oil, adding a dash of soy sauce, salt, and pepper to taste for 30 seconds in the microwave. Stir well and spread it over the rolled enoki pieces with a brush. You can let the sauce soak in for a minute to really intensify the flavor and spread more over again. 
  6. Lightly coat each piece in cornstarch. Spray with a little oil to make sure you'll get that crispy exterior. 
  7. Place the pieces in the air fryer at 190°C for 10–15 minutes, checking often to avoid burning!
  8. Once golden and crispy, drizzle with more hot honey and top with sesame seeds. Serve hot and enjoy!
